我觉得这里是the days做we lived的宾语,直接修饰的the days,就像the day you went away一样,后面是状语.
这个是we spent the days,作宾语省略连接词.
结论是,只有从句结构完整或者the days作主语才用连接词.

这是一复合句,Gone are the days是主句when we lived on the farm是定语从句修饰先行词days因为先行词在从句中做时间状语即相当于we lived on the farm in the days所以用关系副词when引导,引导词不省略.主句是一倒装句.把主语the days和表语gone完全颠倒.也是为了后面的定语从句.
第二句也是一样,前面是一倒装的主句后面是一定语从句因先行词days做从句中动词spent的宾语所以用了关系代词that/which来引导.同时可省略这一引导词.
